Olive Cellar only offers the best olive oils from around the world, specifically, 100% Extra Virgin Olive Oil (EVOO). In order to be classified as 100% Extra Virgin Olive Oil, the oil must meet several stringent criteria:
From the "First Pressing" of fresh olives
Free acidity (quality and freshness quotient) of .08% or less. The lower the acidity, the better the oil. The Olive Cellar's oil are generally .03% or less
No heat, steam or water is used to extract the oil from the olives (Cold Press)
The extracted oil has been evaluated by a panel of experts and deemed the best (with no defects) for taste, flavor and aroma.
